Having worked with our fig producer in the mountains of Andalusia for some time now, both in Spain and in the United States, we decided to take advantage of the abundance of figs and natural resources produced in and around the Granada region. We found locally grown natural cane sugar and fresh lemons that we used to balance flavors and use the lemon juice as a natural preservative. Since the figs we work are so unique - they're grown in what feels like a tropical micro-climate, harvested in November once ripe. Most of the worlds figs are harvested and dried in August under blistering hot conditions and often times, under-ripe which produces the "shelly skin" often associated with figs. Our figs have almost no skin, it looks more like a micro-layer - that's what makes our fig jam and fig cake so special. Quality.

Understanding that each bottle of fig spread is handmade in a small "nave" near the base of the mountains, one can appreciate the effort and love that goes into this artisanal product. The farmer we work with started a fig cooperative many years ago, focusing on quality product. Thanks to Jose, we can all share this amazing product and smile.

We recommend that the fig spread be stored in a refigerator after opening to prevent mold and contact with direct heat. In Spain, we pair the fig spread with Manchego cheese or simply spread on a piece of toast, topped off with a fire-roasted marcona almond. Simply delicious.

Tasting Notes & Pairings:
This year's fig jam is bursting with the natural honey content from the andalusian figs used to make each jar. The sugar content is very low (12g of 225g) and this helps balance out the flavor while the extremely subtle hint of lemon is prevalent only if you look for it. We enjoy this with cheese and crackers, spread over a pork roast or used by itself on a piece of toast or bread.
