Unusual for the fact that these prized figs are harvested in the month of October, the fresh figs are dried in a cool, tropical micro-climate where they dry slowly. Most figs which are harvested in dried in the month August under the blazing hot sun, creating a skin, or shell, that is thick and chewy. We'll have none of that with our superior Spanish figs. Once the figs are dried they convert to about 50% to 60% sugar. Our figs also have a notable amount of protein and abundant calcium, magnesium phosphorus and potassium. The nutritional values for fig cake are generally heart healthy. The Greek mention them and around 60 A.C. and Plato promoted the fig as being the nutrition for athletes. A story is known of the Greek government that had forbidden all export of figs once to assure themselves a good outcome at The Olympic Games. Once the figs are dried in mild conditions, they are placed in a meat grinder with crushed marcona almonds and a touch of anis liquor to naturally pasteruize the fruit while adding savory flavor. The resulting mash is then pressed by hand into bricks and sealed with heavy cellophane to preserve freshness. Aguibal's fig cake is truly one of a kind. The soft texture and consistency of the fig cake lends itself well to pairing with different cheeses or eaten on its own as a healthy snack. It also can be "shaped" for culinary presentations and fancier cheese plates. Our fig cake can be stored in the refrigerator or at room temperature; either way, wrap them tightly in an air- and moisture-proof container. Dried figs may keep for several months.
